I seem forever to be looking over and tweaking the menus whether its for a season change or I’ve come up with a new idea for a dish.
As I’ve always said, even when I was working in hotels and restaurants, I never completely ripped a menu over and started again and favoured instead tweaking dishes and dropping new ones in where inspiration has hit.
With our menus however I find it a little more challenging. We have the loyal favourite dishes which seem to be requested time and time again and I am reluctant to take them off as they have been so successful over the years and lean more to tweaking them than trying to reinvent them.
That said, I am really excited for my new lamb dish! It is inspired by one of the dishes I ate in India and loved! Have a look over the spring menu and let me know what you think, I am really excited to cook it for guests and clients!
