Vanilla Creme Brulee, Carrot Cake,

Rum & Raisin & Walnuts


This dish isn’t new to me; I’ve been enjoying it in different forms for quite some time. But I absolutely adore this particular version. It’s not only visually stunning, with its vibrant colours and pop, but the flavour combination is simply divine. The different textures and temperatures create a delightful finish to the meal.

 

It’s so much fun to set the caramelised top in the bowl and drizzle the glaze over it. Then, you can dress the rest of the dessert on top, and as you eat, your spoon disappears through the “plate” and into the creamy caramel.

 

The delicate carrot cake soaks up the silky smooth ice cream and cream, while the walnuts add a touch of acidity and texture. The pickled carrots and watercress garnish bring a delightful hint of pepperiness to the mix. It’s a symphony of flavours in every bite!
