Focaccia is one of the easiest breads for me to prepare, and it's a great one to involve the kids in making. It's delicious when served with buffets, barbecues, or even simple dinners.
It's sturdy enough that it's quite hard to overproof or underproof, and you can enjoy experimenting with different flavors.
Here's my recipe for Focaccia, and I hope you enjoy baking it.
Ingredients
500g Plain Flour plus flour for dusting
10g Salt
15g Fresh Yeast or around 15g dry yeast
30g olive oil
300g water
Olive oil for "feeding"
10g Rosemary picked and chopped, keeping the sprigs of rosemary to one side
15g Garlic Salt
Molden Salt for Sprinkling
50g Finely Sliced Red Onions
20g Grated Parmesan
Tip: everything below the olive oils is optional and feel free to swap for your favorite herbs or flavourings.
Method
Place all of the ingredients down to and including water in a mixer bowl and, using a dough hook, mix the dough for 6 minutes on a medium speed. The dough should come together and be slightly sticky.
Loosen the dough from the edges of the bowl by wetting your hands and lifting it out of the bowl. Place back in the bowl, cover with a dry clean cloth and place in a warm area and leave for a couple of hours or until it has doubled in size.
Line a small roasting tray with backing paper.
Add the remaining ingredients and place back onthe mixer with the hook for 2 minutes on a slow speed.
Lightly flour a chopping board and place the dough on top. Roll the dough out to a rectangle shape around the same size as the roasting tin and place in side the tin.
Brush liberally with olive oil and plunge your fingers into the dough to make indents - the kids will love helping with this!
Stud the dough with the left over rosemary sprigs and cover with cling film. Place in your warm place again for an hour.
Pre heat the oven to 180ºc. Remove the cling film and brush with more olive oil so it is glossy. Sprinkle with the molden salt and place in the oven for 30 minutes.
After 30 minutes turn the bread over and bake for a further 10 minutes.
Remove the bread and cool correct way up, tear and share!
